If the filet mignon beef tip martini ($8) at Myles J (4304 Westheimer, 713-850-1850) were served on a regular plate, it would be good. But put it in a beautiful, blue-stemmed martini glass, serve it with a spoon and voilà it turns into something spectacular. In this simple dish, mashed potatoes infused with lots of garlic and truffles line the bottom of the glass; they're topped with tender, braised beef chunks that have been simmered in country brown gravy. Spoon up a beef tip and a chunk of potatoes and see for yourself.
